Tomato and Herby Bean Salad

Ingredients

Salad

4 large ripe tomatoes, chopped

12 cherry tomatoes, halved

1 jar white beans (drained and rinsed)

1 large red onion, finely sliced

1 shallot (small red onion), finely chopped

1 red chilli, finely sliced (adjust to taste)

1 small clove garlic, minced

1 small bunch fresh basil, torn

1 small bunch fresh parsley, chopped

2 tbsp capers (drained)

1 hard-boiled egg, cut into halves or quarters

Dressing

3 tbsp olive oil (plus extra for serving)

1 tbsp red wine vinegar (or sherry vinegar)

1 tsp Dijon mustard

Juice of 1 lemon

Salt & black pepper to taste

To Serve

Crusty bread
